let me just ask it another way in-case its not clear. what method do you use to attach a numerical value to the raw enchanting mats produced by the shuffle?

Search the AH to check current price. Or have i missed something?
Use market price, it's all about opportunity cost after all. If the price falls below the market price (I would say what they're actually posted for, not auctioneer's average price. Volatile market and all), just post some to sell directly. I make sure I have enough to cover a posting cycle of my scrolls then usually post a few, since enchanting scrolls move (relatively) slowly.
I value enchanting mats based on a rough average of what it costs to buy them in bulk. Not the AH price, the average I pay when using all the tricks to get them at a reasonable price, barking trade, picking cheap ones of the auction, etc.
For example, rough values I was using not too long ago are 80g for Greater Celestial Essences, 80g for Heavenly Shards and 160g for Maelstrom Crystals. Someone who just buys his mat at whatever the going rate happens to be when he's crafting would probably wind up paying more like 100g for essences and shards and 200g for crystals.
Don't put too much stock into things like market averages either.. Those mostly reflect overpriced items that are NOT selling in bulk.. The more reasonably priced mats sell quick!
When I look at the shuffle..I try to make my Carn's and inferno rubies pay for 100% of the ore. Anything else is pure profit.
So all my dust and Greater Celestial Essence I can make as much as I want.
I have 1000s of elementium ore, I will have more dusts and Greater Celestial Essences then I could sell if I prospected/disenchanted it all.
I have to pay for Maelstrom Crystals because I don't raid. My heavenly shard I can make too from the blue jewerly pieces.
so I make so much from Jewelcrafting that my enchanter is just pure profit.
the reason i ask is because i'm trying to figure out what price i should add to my TSM material cost field. atm i'm pricing it at the bottom end of the AH cost but it's not sitting right with me and i want to get a more accurate figure
I use the cost of ore to determine the average cost per enchanting material. Then, I base sell prices on how fast materials sell versus how fast I want to restock them. I don't want to be shuffling all day every day, so I price high enough that I move an hours worth of shuffle over a couple days (or something like that).
Items disenchanted: 172,000+
Materials produced from disenchanting: 416,000+
Enchanting formulae learned: 348
having had a good think about it I've decided to use the highest price i could consistently sell the mats for, that way i know i'm not eroding my profits by selling unprofitable enchants.

Yeah that's essentially what I do. I don't understand the concept of undervaluing your mats at less than market value. Because of this I don't sell very many Cata scrolls. There are several guys on my server who consistently list scrolls well under mats cost, so I buy from them when I need something and sell almost all of my mats.
