Let's say you play horde-side. Pretend you're running a bot. You walk away, and come back hours later, and have stacks and stacks of ore. Your options are:

2) Sell 4 stacks of ore at 50g/stack alliance-side, and make 200g on the wrong faction. You can buy one rare-quality cut gem now (since gem prices are similarly high and items similarly rare alliance-side), or buy two of those gems horde-side. So now you gotta transfer that gold back to horde-side to be useful.
Having gold on a faction where you don't play isn't very useful. And if you say "well why don't they just move their played toons to the alliance side", then I ask why they should uproot from their guild and change faction, just to have less buying power.
